Birthday cake and brownies.
Apr. 2nd, 2010 01:42 amSince A.J. and Jack's birthdays are exactly two weeks apart, sometimes we're not all in the mood for birthday cake again yet. (Isn't that funny? Birthday cake, no. Other desserts, yes!)
A.J. always, always, always requests a chocolate cake. Take that to the bank - count on it. One year he nearly killed me by choosing a dark chocolate fudge cake mix with devil's food dark fudge icing - eep! Even with a cold glass of milk, I could barely get down two bites! He loved it, though. However, he's since requested cakes that are a bit more palatable to the rest of us as well. *wink*
This year, he chose a devil's food cake with vanilla buttercream frosting. He picked out all the decorations, too. He didn't ask for his cake until just over a week after his actual birthday, but it was perfect timing: I was baking that day already!
And so, his cake:

As to the other baking, I was working on brownies for Runza National. I'd sent them before, but a certain special lady hadn't been able to eat any of them during her pregnancy. Now that she had returned from her maternity leave, she was a-craving! Behind my Butterfinger Brownies, these are probably my most requested brownie:

Peanut Butter Cup Brownies.
They're SO simple to make! Prepare your favorite brownie recipe as usual (boxed works great, but Philip prefers my homemade ones). Immediately upon removing from the oven to cool, visualize where your cuts/servings will be, and then press an unwrapped miniature peanut butter cup into the center of each one. Allow to cool to room temperature; cover. (You'll notice that even though the brownies are cool, the top of the peanut butter cup will still be melty.) Cool completely overnight to give the peanut butter cups a chance to fully firm again. Cut into servings and enjoy!
