I guess I'm NOT making Chicken Gumbo tonight. I don't have any V-8 juice, and I'd forgotten about that. (And we are NOT going back out today to get some.)

That's the only thing I really wanted tonight. It would have made my snuffly nose and sore, sore throat feel so much better. :-(

It's probably a little late to help out now, but I have an awesome crock-pot "chicken and rice gumbo soup" recipe that I'll be glad to share if you want it. It doesn't call for v-8... it's really supposed to be more of a soup served over rice than traditional gumbo, but I usually throw the rice into the cooker for the last 3-4 hours or so and it comes out all gooey and gummy and... well, yummy. If you're interested in the recipe, you're welcome to it, just let me know.
