Tonight was 'Ghetto' Enchilada Night. It might be known to others as 'Nicole-forgot-to-see-if-we-had-cream-of-chicken-soup-so-she-used-mushroom-soup-instead' Enchilada Night. And there are some that might even go so far as to call it 'Dude-you-only-had-four-of-the-needed-twenty-corn-tortillas-and-tortilla-CHIPS-are-not-considered-an-acceptable-replacement' Enchilada Night. Whatever you call it, it did still turn out pretty tasty!

• Stretch four tortillas to cover 9x13 pan


• Beef/bean mixture


• Tortilla chips


• Remaining soup/sour cream mixture


• Cheese

Mmmmmmm. Mmmmmm and... crunchy? Yes, a bit crunchier than normal. But hey! What's life without a little extra jaw action? ;-)
