What's for dinner?

I've got a roast thawing in the fridge that won't be ready until tomorrow night, bbq pork sandwiches planned for Wednesday, stew & dumplings for Thursday, and I've not yet thought about Friday. But tonight, I have a pound of hamburger thawed, only no good ideas what to do with it.
I'm hankering for stuffed zucchini because Heather dropped off two gorgeous zukes from her garden this morning, but I don't have any leftover spaghetti sauce or chili in the fridge at the moment (I need some type of thick sauce - doesn't really matter what, exactly). I could make hamburgers, but I want to save those buns for the bbq pork sandwiches instead. I don't want to make just hamburger patties for dinner, along with veggies and other sides, because somehow, without smashed taters 'n gravy or buns, that single pound of meat just isn't enough to fill up my boys.
*sigh*
I've got a couple jars of my mom's canned tomatoes in the cupboard, so I could make goulash... but I have no potatoes on hand (I threw out the last of the bag a few days ago - it had gone bad already). I do have cheese - a few kinds, in fact. My guys aren't crazy about just plain, sauteed-in-olive-oil chunks of zucchini, if I were to make that as a side to hamburger patties....
Ugh. I have no ideas. I could make tacos - I have the seasoning, the beef, the cheese, the shells and soft tortillas... but I have no fresh tomatoes or lettuce.
*drums fingers on desk*
I say we just screw it and have dessert instead. I have TONS of ideas for that, and all the fixins' to make each of them. I was planning on zucchini bread for one of those babies anyway, right? Yep!
Edited to add: Oh, oh, oh! How 'bout this? What if I make taco meat as per the usual, and then use THAT for my meaty sauce in stuffed zucchini? I can mix in some of the canned, stewed tomatoes, as well as some rice (I always have that on hand), and then top it with cheese like usual. YES!
