OK you zucchini addict, I have a recipe that you might like. I'll have to get the specifics from my mom, but it calls for some boiled zucchini slices, shredded carrots & chopped onion, sour cream, cream of mushroom soup, cheese, & topped with a canister of Stove Top stuffing. We love it- it's pretty good! I'll ask her for it tomorrow when we talk. Crap, now I'm hungery for it & it's almost 1 in the am. Way to go, Jame. Good one.
